now we're talkin

Eric is always fixing the drainpipe and installing ceiling fans and other helpful things. Sometimes I have to say, "Stop fixing things all the time! Just relax!"

A quick morning's harvest. There's about 50 more where that came from. Too bad they won't ship to Maryland (or California, or Louisiana). The basket is a relic from Lewis' Orchard.

best catfish ever!

Catfish in clay pot - or any pot - my favorite Vietnamese dish.

Ingredients:
2 Catfish fillets.
2/3 cup chicken or fish stock.
3 garlic cloves.
3 green onions (garnish).
Cilantro (garnish).
2 tablespoons sugar.
Dried chile (to taste).
1 tablespoon vegetable oil.
1 tablespoon sesame oil.
3 tablespoons fish sauce (or less).
Black pepper (to taste).
That's it!

Prep:
Get some catfish (~2 pounds?). Cut into bite-size chunks.
Heat 2/3 cup of chicken or fish stock.
Chop 3 garlic cloves.
Slice 3 green onions into 1-inch pieces.
Chop the dried chili into manageable sizes. Or, just use CRP.

Cooking:
Put 2 tablespoons sugar in the pot of choice. Add enough water to wet it. Heat on medium to medium-high until the sugar browns. (This is an exciting part. Maillard reaction all over the place! It can take a while for the browning to happen. Also when it browns the sugar turns syrupy.)

Add the garlic, some chopped dried chile, 1 tablespoon vegetable oil, 1 tablespoon sesame oil.

Stir constantly for about 1 minute. Add 3 tablespoons fish sauce and the hot stock and stir again. (I think this is too much fish sauce, actually, and the next time I make it I will use 1.5 tablespoons instead.)

Put the fish chunks in. If possible they should fit in a single layer. (This is where using the wok was a slight disadvantage because it's so curved. However, based on the flavor, the single-layer thing doesn't actually make any difference.)
Turn the pieces so they are coated in the sauce.

Set heat to medium-low and cover. Simmer 5-6 minutes.

Uncover and set heat to medium. Let the sauce reduce until thick, 3-4 minutes.

And serve! Garnish with the green onions, cilantro, black pepper.

first harvest!

The peaches are mostly what they call "seconds," even though we harvested them first. They're not quite ready to eat yet, but they smell amazing. The raspberries are -surprise!- a mix of white and normal red raspberry bushes. This makes finding the ripe white ones a tricky task. And the grapes are not seedless, and not totally ripe yet, but the truly ripe ones are so delicious. I wonder how normal grape harvest works.

The parsley forest has been conquered and now lies in a vanquished heap. We have no yard waste bags so I predict it will be lying in this heap for quite some time.

Hello Garage!











Garden update

I finally found the connector cord for the camera so I can upload pictures now!
The fruit tree, laden with fruits.

We have finally and conclusively decided, these are peaches.

These are from another fruit tree we hadn't looked at closely enough. We thought it was apple. Now we're not sure. The fruit is definitely not ripe though.

Tomato

Nineteen weeks.  Can you believe that?  According to one website the baby weighs about 8 1/2 ounces and measures 6 inches, head to bottom about the size of a large heirloom tomato.  Since when is a tomato 6 inches long?  Oh well,  soon it will be banana the cantaloupe or watermelon sized.  I can't wait...  Also I felt him kick for the first time while we were watching cartoons.  Mawg has said its been going on for a couple of weeks but I didn't believe her.


Also my mom says "I see a spaghetti squash in your near future"  But I don't believe here.  The only pepo my child could possibly be is a pumpkin or pumpkin head.
